Originally, cobblers were made with the crust of a pie with fruit filling inside and the top and the bottom crusts made of pie dough. Many believe the dessert got its name because the cooked dough that was covered over fruit filling looked like cobblestones. The thing to remember is that the fruits filling is covered with biscuit dough and baked in a pan before it is served.
Crisp is a dessert made with fruit filling inside the biscuit dough that has been baked. Crisp was introduced by the British to the world, and it became popular in the US during the WW II. You just need to bake the mixture of fruits after making a topping with crumbs. This could be crumbs of bread, nuts, flour, or even a cereal. Sometimes people make a mixture with butter, nuts, bread crumbs, sugar, oatmeal etc. and sprinkle it over fruit pieces and put inside oven to bake. What is called a crisp in US is interestingly referred to as a crumble by the Britons. The presence of nuts and raisins in the crisp make it crispy after getting baked.
